Grammel – (greaves) biscuits

Ingredients for 50 servings:

  • 250 g cracklings (greaves), finely chopped
  • 250 g powdered sugar
  • 200 g flour
  • 1 egg(s)
  • 60 g chocolate, dark, soft
  • 2 tbsp rum, domestic

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Mix all ingredients together and knead the dough thoroughly. If the dough is too soft, add a little more flour. Cut out shapes (I always use a round, serrated shape) and bake slowly at 160°C for about 10 minutes. Let the cracklings warm for a while before cutting and weighing them so they’re not too hard! You can also use currant jam to stick the cookies together, but it’s not necessary. This is an old recipe from Göga’s grandmother!
