Ingredients for 1 servings:

  • 250 g butter, soft
  • 250 g sugar
  • 5 eggs
  • 250 g flour
  • ½ tsp ground cinnamon
  • 1 lemon(s), grated peel
  • 2 apples
  • Fat for the mold
  • Flour for the mold
  • 1 pinch of salt

Separate the eggs; you will need four egg whites and five egg yolks. Cream the soft butter and sugar until light and fluffy. Stir in the five egg yolks and beat with a hand mixer until the sugar has dissolved. Mix the flour, cinnamon, and lemon zest together and stir into the sugar and egg mixture a spoonful at a time. Peel, quarter, and core the apples. Cut the apple quarters into 1 cm cubes and mix them into the batter. Grease and flour a 26 cm springform pan. Beat the four egg whites with the salt until stiff peaks form and carefully fold them into the batter with a spoon. Pour into the springform pan and bake on the middle rack in a preheated oven at 200°C for about 35 minutes. Test for doneness. Let the cake cool briefly, remove the pan, and let it cool on a wire rack.
