- 1 tbsp butter
- some bouillon or red wine
- possibly water
- salt and pepper
- Flour for the work surface and for dusting
- e.g. nutmeg
- e.g. chili powder
Instructions
Working time approx. 25 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 10 minutes
Peel the onion and finely chop it with the parsley. Sauté both in a frying pan with butter, then let it cool. Knead the sausage meat, minced meat, onions, and parsley thoroughly in a bowl and season with salt and pepper. Scoop the mixture into portions with a tablespoon and form into balls by hand on a floured surface. Fry the balls in a frying pan with butter on all sides until golden brown, then dust with flour and deglaze with stock or red wine, if desired. Season to taste and add stock or water until the balls are about three-quarters full. Slowly reduce the sauce and simmer the balls on low heat. The dish should be ready after about 40 minutes. Season to taste with nutmeg and chili powder. Almost anything goes well as a side dish, e.g., pasta, rice, polenta, mashed potatoes, potatoes, etc.
