Grandma's bean and potato stew with smoked tofu

Ingredients for 2 servings:

  • 500 g potatoes
  • 500 g beans (bush), green
  • 125 g smoked tofu
  • 400 ml vegetable stock
  • 1 large onion(s)
  • 1 tbsp mustard
  • 1 shot of vinegar
  • some oil for frying
  • Salt
  • Pepper, freshly ground
  • n. B. savory

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Wash and peel the potatoes, and cut into thumb-thick cubes. Wash the beans, trim off the ends, and cut into bite-sized pieces. Finely dice the onion and smoked tofu. Fry the onions and tofu in hot oil. Add the potatoes and beans and toss several times with the onions and tofu. Season well with salt and pepper and deglaze with vegetable stock. Add savory, if desired. Simmer with the lid closed for 20 minutes, until the beans and potatoes are tender, stirring occasionally. Add the vinegar about 15 minutes before the end of the cooking time. Season with mustard, salt, and pepper, and enjoy.
