Grandma's fish salad with a twist

Ingredients for 1 servings:

  • 1 can of fish (sardines in oil, preferably boneless)
  • ¼ onion(s), finely diced
  • 1 small gherkin(s), finely diced
  • 1 dashes vinegar
  • 1 dashes lemon juice
  • salt and pepper
  • 4 slices of baguette
  • 1 sprig of parsley
  • 1 slice(s) lemon(s)

Instructions

Working time approx. 30 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 30 minutes

Non-fish eaters will definitely like it too

Place the sardines in oil (available with or without chili; I prefer without, but it’s up to you) into a bowl and roughly mash them with a fork (it’s easy). Then add the very finely diced onion and cucumber. Season with salt and pepper, and season with vinegar and lemon. Let it marinate in the refrigerator. Spread the salad on the baguette slices and garnish with parsley or lemon.
