Grandma’s Potato and Vegetable Soup

Ingredients
 

  • 2,5 kilogram Potatoes
  • 4 Carrots
  • 1 small Cauliflower, brooli, kohlrabi or zuchhini whatever you like
  • 1 liter Water
  • 3 teaspoon Vegetable broth
  • 250 Milliliters Sweet cream
  • 5 Sausages (Viennese style)
  • Salt and pepper
  • Parsley, fresh or dried

Instructions
 

  • Peel the potatoes, wash them and cut them into small pieces in a large saucepan. Peel, wash and slice the carrots, put them in the pot with the potatoes, cut the cauliflower (still had one in the house) into small florets and wash the carrots with the potatoes. Add the water to the boil and boil for about 20 minutes until everything is soft.
  • Halve the sausages and slice them, put them in a bowl and set aside.
  • When the vegetables are done (do not pour the cooking water away in the saucepan with the vegetables), remove the saucepan from the stove, put the vegetable stock, salt, pepper and the cream in the saucepan and puree everything finely. If it is too thick add a little broth. Season with salt and pepper again and add the sausages and let them get hot. Serve sprinkled with parsley.
