Ingredients for 4 servings:
- 1 kg potato(s), floury
- 1 egg(s)
- 100 g flour, (405)
- 1 pinch of salt
- e.g. apples or plums, prepared, cut into small pieces
- 100 g butter, melted
- 100 g cinnamon and sugar

Peel the potatoes and boil them until tender. Press them through a potato ricer and let cool. Then mix them with a pinch of salt, the egg, and the flour. Add a little more flour if needed; the dough shouldn’t stick. Form the dough into balls and press them down in one place. Fill the resulting hollow with apple or plum pieces. Cover the dumplings tightly and place them in boiling salted water. Let them rest (the water should just simmer) until the dumplings float to the top. Unfortunately, I forgot to measure how much filling I needed. You can always quickly make a few more apples or plums if you realize you’re running low on filling. Divide the dumplings among the plates, pour hot butter over them, and sprinkle with cinnamon and sugar. Usually, the melted butter is kept on a hotplate, and the cinnamon and sugar are kept in separate bowls, so everyone can use more or less as desired.
