Saxon-style parsnip puree

Ingredients for 4 servings:

  • 2 large parsnips
  • 1 large potato(s)
  • 1 m.-sized carrot(s)
  • 1 m.-sized onion(s)
  • salt and pepper
  • herbal salt
  • 100 ml milk
  • 500 ml water

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Peel the parsnips, potatoes, carrots, and onions, cut them into pieces, and place them in a saucepan. Fill with water so that the vegetables are covered. Let it simmer for about 20 minutes. Drain the cooking water and puree the vegetables with a hand blender or immersion blender. Depending on your preference, this may still contain some chunks. Season with salt, pepper, and herb salt. Stir in hot milk until the desired consistency is reached.
