Grandma's potato salad

Ingredients for 4 servings:

  • 1 ½ kg potato(s), waxy
  • 1 onion(s)
  • 3 tbsp oil (grape seed oil)
  • 5 tbsp vinegar, e.g. Altmeister, wine-spiced
  • 1 bunch of chives or parsley
  • 200 ml vegetable stock
  • 2 tsp salt
  • 2 pinches of pepper

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 55 minutes

Peel the potatoes and cook for about 25-30 minutes (depending on the size of the potatoes). Finely chop the onion. Halve or quarter the warm potatoes and slice them thinly. Add the vegetable stock. Spread the diced onions over the potatoes. Sprinkle salt and pepper over the diced onions. Add the vinegar and oil and stir gently. Garnish with chives or parsley.
