Grandma's potatoes with chive sauce

Ingredients for 2 servings:

  • 500 g potatoes
  • 1 onion(s)
  • 4 eggs, hard-boiled
  • 1 bunch of chives
  • 500 ml milk 3.5%
  • 1 tbsp spirit vinegar
  • 3 tbsp sunflower oil
  • some salt and pepper

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Peel and slice the potatoes. Peel and dice the onion. Sauté the onions in a pan with 1 tablespoon of oil until translucent. Then add the potato slices to the pan and lightly cover with water. Add a pinch of salt to the pan. Simmer over medium heat until the potatoes are tender. Meanwhile, peel the hard-boiled eggs. Carefully remove the yolks from two of the eggs and dice the rest. Chop the other two eggs in the same way. In a large bowl, mash the two hard-boiled egg yolks with 2 tablespoons of neutral oil and 1 tablespoon of spirit vinegar. Add the remaining eggs to the bowl. Finely chop the chives into the bowl using scissors. Season with salt and pepper. Then add the cold milk to the bowl and stir well. Season again with salt and pepper. When the potatoes are tender, arrange them on deep plates using a slotted spoon. Then pour the cold chive sauce over them.
