Ingredients for 1 servings:
- 500 g low-fat curd cheese
- 5 tbsp sugar
- 3 packets of vanilla sugar
- 2 lemons, untreated
- 3 tbsp oil, neutral
- 6 tbsp milk
- 1 pinch of salt
- 7 eggs
- 3 tbsp rum
- 500 g flour
- 1 packet of baking powder
- Oil for frying, approx. 1 1/4 l
- Sugar for rolling

Wash the lemons in hot water, dry thoroughly, and finely grate the zest. Combine all ingredients except the flour and baking powder in a large bowl and stir together. Then stir in the flour mixed with the baking powder. The rum helps prevent the pastry from absorbing too much fat. Heat the frying oil in a stainless steel pot over medium heat. Using a tablespoon, scoop out portions of dumplings, place them in the hot oil, and fry slowly. Briefly drain on kitchen paper and roll in sugar while still hot.
