Grandma's rice with raisins

Ingredients for 4 servings:

  • 300 g rice
  • 4 tbsp oil
  • 1 pinch(s) saffron threads
  • 50 g apricot(s), sliced, dried
  • ½ cinnamon stick(s)
  • 8 cloves
  • 4 peppercorns
  • 4 cardamom pods, crushed
  • Salt and pepper, ground
  • 2 onions, sliced
  • 50 g raisins
  • 50 g pine nuts
  • n. B. mint leaves

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 5 minutes

Heat half the oil. Fry the rice for five minutes. Add the saffron, apricots, spices, salt, pepper, and 3/4 liter of water and bring to a boil. Cover and simmer over low heat for 45 minutes. Remove the pot from the heat, but leave the lid on. Lightly brown the onions in the remaining oil and add them to the rice along with the raisins and pine nuts. Season the rice to taste, fluff it up nicely with a fork, and serve garnished with mint leaves.
