Avocado-tomato soup

Ingredients for 4 servings:

  • 1 small onion(s)
  • 1 garlic clove(s)
  • 2 tbsp oil
  • 600 g tomatoes
  • 500 ml vegetable stock
  • 1 avocado(s)
  • 30 g tortilla chips
  • 1 chili
  • 1 tbsp lime juice
  • salt and pepper

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 55 minutes

Peel and chop the onion and garlic. Dice the tomatoes. Chop the chili. Dice the avocado flesh and drizzle with lime juice. Heat the oil in a saucepan. Add the onion and garlic and sauté. Add the tomatoes and simmer for 10 minutes. Pour in the stock. Add the chili and simmer for another 15 minutes. Puree and pass through a sieve. Add the avocado pieces. Sprinkle with crushed tortilla chips.
