Grandma's Sour Kidneys

Ingredients for 4 servings:

  • 4 kidney(s) (pork)
  • 2 tbsp margarine
  • salt and pepper
  • 200 g bacon, fattier
  • 6 bay leaves
  • 10 onions
  • 1 shot of vinegar
  • 1 pinch(s) of sugar
  • some flour
  • some water, cold

Instructions

Working time approx. 30 minutes; Rest period approx. 2 days; Total time approx. 2 days 30 minutes

Soak the kidneys for about two days, changing the water frequently (until the water runs clear). Then trim and clean any tendons, etc. Place the kidneys in a towel and pat dry, then cut into small pieces. Peel the onions and dice them along with the bacon. Sauté in melted margarine, then add the kidney pieces and season with salt and pepper. This will produce a lot of liquid – discard and reserve. Now fry everything again, gradually adding the reserved liquid and the bay leaves. Simmer for 45 minutes. After this time, season to taste with salt, pepper, a pinch of sugar, and a dash of vinegar. Mix a little flour with a little cold water and use this to thicken the sauce. Serve with mashed potatoes and salad.
