Grapefruit Sorbet

Ingredients for 8 servings:

  • 200 g sugar
  • 200 ml water
  • 3 grapefruit(s), pink
  • 1 lemon(s)
  • 100 ml white wine
  • 5 tbsp Campari
  • 2 egg whites
  • Mint, fresh
  • 1 bottle of sparkling wine

Instructions

Working time approx. 30 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 30 minutes

Boil sugar and water until syrupy and let cool. Squeeze the grapefruit and lemon juice (approx. 200 ml) and pour through a sieve. Add the white wine and Campari. Beat the egg whites until stiff and fold into the juice. Pour into a metal container and freeze. Stir every 30 minutes until the liquid is frozen. Divide among sorbet glasses and serve with sparkling wine poured over it.
