Grapefruit with cream cheese

Ingredients for 2 servings:

  • 1 grapefruit(s), pink
  • 1 tbsp sweetener (Frutilose)
  • 150 g cream cheese
  • 4 mint leaves

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Halve the grapefruit. Cut a slit between the skins with a sharp knife and scoop out the flesh. Chop larger pieces into small pieces. Collect the juice, squeeze out any remaining pulp from the skin, and mix the juice with the Frutilose. Mix the cream cheese with the sweetened juice and fold in the grapefruit pieces. Remove any remaining fruit from the grapefruit halves. Fill the halves with the cream cheese mixture and garnish with the mint leaves.
