Apple and carrot porridge

Ingredients for 2 servings:

  • 350 g carrot(s)
  • 2 apples
  • 1 piece(s) ginger (approx. 10 g)
  • 1 small piece(s) of vanilla pod(s)
  • 1 tbsp nut butter (e.g. hazelnut or almond butter)
  • 2 tbsp berries, fresh or frozen

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Paleo diet. For hot summer days, refreshing, low-carb

Peel the carrots and cut into small pieces. Peel the apples, remove the cores, and finely chop the flesh. Peel the ginger and dice very finely. Pour 200 ml of water into a saucepan, add the apples, carrots, ginger, and vanilla pod, and simmer in a covered pan for 10 minutes. Remove the piece of vanilla pod and puree the carrot and apple mixture with a hand blender. Shortly before serving, mix the puree with nut butter, pour into small bowls, and garnish with berries. Delicious hot or cold.
