Ingredients for 3 servings:
- 750 g asparagus, green
- Salt
- 150 g smoked salmon
- some lemon juice
- 250 g hollandaise sauce
- Pepper, pink
- 1 bunch parsley, chopped

green asparagus with a twist
Trim about 2 cm from the ends of the asparagus. Cut the asparagus into pieces, wash, and cook in boiling salted water for about 8 minutes. Remove, drain well, and place in a baking dish. Spread the smoked salmon on top and drizzle with lemon juice. Pour the hollandaise sauce evenly over the asparagus and broil it under the hot grill for about 8 minutes, until the top is light brown. Sprinkle with pink peppercorns and parsley and serve.
