Gratinated Asparagus with Goat Cheese

The perfect gratinated asparagus with goat cheese recipe with a picture and simple step-by-step instructions.

  • 1 kg Asparagus green fresh
  • Salt
  • 0,5 tsp Sugar
  • 1 tsp Butter
  • 250 g Cream / sour cream 20% fat
  • 2 tbsp Semi-Dry white wine
  • 1 Egg yolk
  • Pepper from the grinder
  • 250 g Goat cheese roll
  • 0,5 bunch Chives fresh
  • 1 tbsp Finely grated carrots
  1. Wash the asparagus, cut off the ends. Cook the asparagus in boiling salted water with sugar and butter until al dente.
  2. Preheat the oven to 225 ° C (fan oven 200 ° C). For the cream, mix the sour cream with white wine and egg yolk and season with salt and pepper. Dice the goat cheese and stir half into the mixture.
  3. Take the asparagus sticks out of the pot, drain and cut into pieces. Divide into 4 small casserole dishes and pour the cream over them. Spread the remaining cheese on top and bake in the oven for about 15 minutes.
  4. Garnish with chives and grated carrots.
