Gratinated Asparagus with Goat Cheese

- 1 kg Asparagus green fresh
- Salt
- 0,5 tsp Sugar
- 1 tsp Butter
- 250 g Cream / sour cream 20% fat
- 2 tbsp Semi-Dry white wine
- 1 Egg yolk
- Pepper from the grinder
- 250 g Goat cheese roll
- 0,5 bunch Chives fresh
- 1 tbsp Finely grated carrots
- Wash the asparagus, cut off the ends. Cook the asparagus in boiling salted water with sugar and butter until al dente.
- Preheat the oven to 225 ° C (fan oven 200 ° C). For the cream, mix the sour cream with white wine and egg yolk and season with salt and pepper. Dice the goat cheese and stir half into the mixture.
- Take the asparagus sticks out of the pot, drain and cut into pieces. Divide into 4 small casserole dishes and pour the cream over them. Spread the remaining cheese on top and bake in the oven for about 15 minutes.
- Garnish with chives and grated carrots.
