  • 1 Goat cheese roll
  • 1 tsp Honey
  • 4 tsp Fig jam
  • 300 g Lamb's lettuce
  • 4 Lobster crabs
  • 16 Raspberries
  • 1 shot Olive oil
  • 1 pinch Salt
  • 1 pinch Pepper
  • 4 Grissini
  • 1 shot Crema di Balsamico

dressing

  • 3 tbsp Olive oil
  • 3 tbsp Water
  • 1 tbsp Raspberry vinegar
  • 1 tbsp Mustard
  • 2 tbsp Chopped herbs
  • 1 pinch Salt
  • 1 pinch Pepper

Instructions

  • Cut the goat's cheese roll into eight thalers of equal thickness and place them next to each other in a lightly oiled, fire-proof baking dish. Pour the honey and fig fruit spread (optionally also jam) over it and place in the oven for about 15 minutes at 150 ° C until the cheese has melted slightly. Wash the Rapunzel, raspberries and lobster crab and pat dry. Season the lobster crabs with salt and pepper and fry them in olive oil.

dressing

  • For the dressing, stir together the olive oil, water, raspberry vinegar and mustard. Then refine with salt, pepper and herbs.
  • Arrange the lobster crabs and raspberries as a face and drizzle with the dressing. Decorate the balsamic vinegar with crema as desired.
