Gratinated hake on pesto vegetables

Ingredients for 4 servings:

  • 1 kg potatoes
  • 1 kg tomatoes
  • 6 tsp pesto alla Genovese
  • 1 tsp capers
  • salt and pepper
  • basil
  • 4 hake fillets (Cape hake fillets)
  • salt and pepper
  • possibly Parmesan, freshly grated

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour

to prepare well

Boil the potatoes in salted water, rinse with cold water, and peel. Slice. Wash the tomatoes, remove the stems, and dice them. Mix the potato slices and tomatoes with 4 teaspoons of pesto and the capers and place in a baking dish. Sprinkle with salt, pepper, and basil. Rub the fish fillets with 2 teaspoons of pesto and season with salt and pepper. Place on top of the vegetables and sprinkle with Parmesan cheese, if desired. Bake at 200°C for about 30 minutes.
