Greek Garlic Lemon Chicken

Ingredients for 4 servings:

  • 4 chicken breasts, without skin
  • 100 ml olive oil
  • 8 cloves garlic, very finely diced
  • 2 lemons, unsprayed
  • Sea salt
  • 1 ½ kg potatoes, young
  • 15 ml olive oil, for the potatoes
  • 2 onions, sliced
  • 100 g feta cheese, crumbled
  • Paprika powder
  • coriander
  • oregano
  • rosemary
  • pepper

Quick to make, great for guests

Make a marinade from the olive oil, garlic, and spices (it should be slightly thick; don’t be too sparing with the spices!). Squeeze in the juice of one lemon. Slice the other lemon. Quarter or eighth the potatoes, depending on their size, toss in a little olive oil, mix with the onions, and spread them out on a deep baking tray. Brush the four washed chicken breasts with the marinade and place them on top of the potatoes. Distribute the lemon slices over the tray, pressing them in slightly so they don’t burn. Place in the oven at 180 degrees Celsius (350 degrees Fahrenheit) for about 40 minutes, brushing them with the marinade occasionally. After baking, sprinkle with the feta and serve.
