the schnitzel of a different kind
Pound the schnitzels and rub them with salt, pepper, and paprika. Coat them in egg and breadcrumbs and fry them in a pan until golden brown. When the schnitzels are done, keep them warm. Prepare the Bolognese sauce as usual, but make sure to use only minced meat (no vegetables). Just before the sauce is ready, add a pinch of cinnamon. Bring back to a boil and season to taste. Be careful with the amount of cinnamon. There should only be a very light, cinnamony aftertaste in the mouth. Prepare the croquettes or French fries according to the package instructions. This basically completes the dish. Place a schnitzel on the plate, add the cheese (you can add a bit more cheese if you like), and then pour the hot sauce over it. By the time the plate reaches the table, the cheese will have melted. A simple mixed salad also goes well with this.
