Green asparagus with garlic and balsamic marinade

Ingredients for 4 servings:

  • 250 g asparagus, green
  • 2 cloves garlic
  • 2 tbsp balsamic vinegar, dark
  • 2 tbsp soy sauce
  • 1 tbsp honey
  • 2 tbsp avocado oil
  • e.g. salt and pepper

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Wash the green asparagus, pat dry, and remove any woody bits. Halve the asparagus lengthwise. For the marinade, finely chop the garlic and place it in a bowl. Add the balsamic vinegar, soy sauce, and honey and mix. Stir in the avocado oil drop by drop, then slowly, to create a smooth emulsion. Season the marinade with salt and pepper, if desired. Preheat the oven to 180°C (top/bottom heat) and marinate the asparagus. Place the asparagus on a baking sheet and bake for 30 minutes, turning the asparagus over halfway through. I recommend serving this with a pan-fried tuna steak and steamed rice.
