Green bean and chanterelle salad

Ingredients for 6 servings:

  • 500 g bush beans
  • 500 g chanterelles, fresh
  • 1 onion(s)
  • Butter for frying
  • Balsamic vinegar
  • salt and pepper
  • Sunflower oil

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

Trim the green beans and cook in salted water until al dente. Let cool to lukewarm. Trim the chanterelles, dust them with flour, and rinse them in a colander under a shower (the flour will bind and rinse off the dirt). Sauté the onion in butter until golden brown. Add the chanterelles and sauté, stirring occasionally. Season lightly with salt and pepper, and let cool to lukewarm. Mix the lukewarm beans and mushrooms. Drizzle with a dressing made from balsamic vinegar, pepper, salt, and sunflower oil. Serve with baguette or as a salad for a party buffet.
