Green bean casserole

Ingredients for 4 servings:

  • 500 g beans, green
  • 2 liters of salted water
  • 1 tbsp butter
  • 1 tbsp flour
  • 200 ml milk
  • salt and pepper
  • 3 eggs, separated
  • 80 g feta cheese, crumbled

Instructions

Working time approx. 35 minutes; Total time approx. 35 minutes

Cook the green beans in salted water until tender. Drain and set aside. Heat the butter in a saucepan, add the flour, and fry lightly. Deglaze with the milk and cook for about 10 minutes, stirring constantly. Let cool slightly, then season with salt and pepper (not too much, as the feta cheese will also be added). Fold in the egg yolks one at a time. When the mixture is almost cold, fold in the stiffly beaten egg whites along with the feta. Mix with the beans and pour into a greased dish. Bake for about 25 minutes at 190°C (375°F). Serve warm.
