Green bean stew with smoked turkey breast

Ingredients for 4 servings:

  • 500 g potatoes, floury
  • 750 ml water
  • salt and pepper
  • 1 tsp vegetable stock powder
  • 750 g beans, green or 600 g frozen beans
  • ½ cup whipped cream (approx. 100 – 125 ml)
  • 1 bunch savory, finely chopped
  • 250 g smoked turkey breast slices, diced

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 15 minutes

Peel the potatoes, cut into large pieces, and boil in three-quarters of a liter of salted water for about 15-20 minutes. Puree the potatoes in the cooking water using a hand blender and season the soup with vegetable stock powder. Meanwhile, trim and wash the beans and boil them in boiling water for 20 minutes (frozen beans only for 15 minutes). Drain the bean water and briefly baste the beans with cold water to retain their green color. Drain and add to the potato broth. Stir in the cream, savory, and turkey breast. Return the stew to the heat and season with pepper and salt, if desired.
