Green beans with hollandaise sauce

Ingredients for 4 servings:

  • 750 g beans (broken), frozen
  • 150 g bacon
  • 2 bunches of savory
  • 3 eggs
  • 1 tbsp white wine vinegar
  • 150 g butter, ice cold
  • 1 bunch of parsley
  • Salt
  • pepper
  • goose fat
  • Butter, salted

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 35 minutes

Heat a little salted butter in a saucepan. Add the bacon and brown well, then add a generous spoonful of goose fat. Add the broad beans to the pan, cover, and cook until al dente. Finally, add the whole savory. Season with salt and pepper to taste. While the beans are cooking, prepare the hollandaise sauce: Beat the egg yolks with the white wine vinegar until frothy. Set the stovetop to medium heat. While stirring constantly, gradually add the ice-cold butter, season with parsley, salt, and pepper. Just before serving, add the hollandaise sauce to the beans.
