Ingredients for 3 servings:
- 30 bush beans
- 6 slices of bacon
- 2 tsp, heaped herbs of Provence
- 1 tsp salt
- e.g. olive oil
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes
with herbs of Provence
Wash the beans and remove the strings. Boil them in just enough salted water to cover the beans for 15 minutes. Drain and immediately place them in ice water to retain their beautiful green color. Mix the cold beans with the herbs de Provence and wrap 5 beans each in a slice of bacon. Place them open-side down in a hot pan with olive oil and sear on all sides with the lid on.
