Green bread dumplings as a soup garnish

Ingredients for 4 servings:

  • 2 eggs
  • 1 bunch of parsley
  • 100 g breadcrumbs
  • nutmeg
  • Salt

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Beat the two eggs with a fork until frothy. Then stir in the finely chopped parsley and season generously with nutmeg and a little salt. Gradually work in the breadcrumbs with a fork. If the mixture is too soft, add a little more breadcrumbs so that small dumplings can be formed. Form dumplings (they will increase in size by about 1/4 when cooked) and simmer in clear broth or chicken broth for about 15 minutes. You can also make the dumplings in regular size, simmer in salted water, and serve them with roasts and plenty of gravy. In this case, double the recipe for 4 people.
