Green broccoli rice

Ingredients for 2 servings:

  • 125 g whole grain rice
  • ½ large broccoli
  • 2 handfuls of soybean shreds, soaked in water
  • 1 avocado(s)
  • 2 tbsp vinegar
  • 1 garlic clove(s)
  • n. B. Oil, neutral
  • ½ liter vegetable broth
  • some salt and pepper

Working time approx. 10 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 55 minutes

Drain the soy chunks and squeeze some of the excess water, then fry them in a pan with plenty of oil. Cut the broccoli into small pieces, including the stalk (you can also peel the stalk if you like). Meanwhile, keep a close eye on the soy chunks! Briefly fry the broccoli. After about 1 minute, add the rice and deglaze with the vegetable stock (you can vary the amount if necessary). While the rice is cooking, prepare the avocado sauce. Halve the avocado. Scoop out the flesh with a spoon and place it in a tall container. Add the finely chopped garlic, the vinegar, a pinch of salt, and 2 splashes of oil, and blend everything thoroughly. The sauce should have a very thick but creamy consistency. Stir the rice regularly. Once the water has evaporated, season generously with salt and pepper and stir in the sauce, then serve.
