Ingredients for 4 servings:
- 1 large onion(s), roughly diced
- 4 cloves garlic, finely chopped
- some olive oil
- 250 g mushrooms, quartered
- 500 g broccoli, in florets
- 2 cans of coconut milk, 400 g each
- 3 tbsp, leveled vegetable broth
- 1 tsp curry paste, green
- 1 piece(s) ginger root
- 2 stalks of lemongrass
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Briefly fry the onion. Add the garlic, mushrooms, ginger, lemongrass, and broccoli, and fry briefly with the curry paste. Deglaze with the coconut milk and season with vegetable stock. Let everything simmer for about 5-10 minutes. Serve with rice.
