Ingredients for 6 servings:
- 300 g flour
- 2 eggs
- 1 salt
- some water
- 6 rolls, from the previous day
- 3 eggs
- some milk
- 400 g pork belly (Wammerl)
- 1 bunch of spring onions
- some margarine
- Meat broth or vegetable broth
- Chives, cut into rolls
Instructions
Working time approx. 1 hour; Total time approx. 1 hour
Dough: Make a smooth pasta dough from the ingredients. This is best done in a food processor. Cut into about 15 equal pieces and roll out thinly. Filling: Cut the rolls into small cubes. Mix the eggs and milk and pour over the rolls, mix well, then fry briefly in a pan. Set aside and let cool. Cut the onion tubes into rings and the Wammerl into small cubes. Mix with the rolls. Fill the pieces of dough with the dough. Fold into pockets, brush the edges with a little water, and press the edges together firmly. Let stand in boiling broth for about 10 minutes. Sprinkle with chives.
