Green lentil soup with mint

Ingredients for 6 servings:

  • 1 jar mountain lentils (green lentils)
  • 2 onions, finely chopped
  • ½ jar soup noodles
  • 1 tbsp tomato paste
  • 2 tbsp oil
  • 1 small carrot(s), finely diced
  • 1 pinch(s) mint, dried

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Turkish specialty

Boil the lentils in one liter of water until soft. The skin should not peel. Drain the lentils and collect the lentil water in a container. Set the lentil water aside. Pour the oil into a saucepan and add the onion. Add the tomato paste and carrots and sauté briefly. Add the soup noodles and simmer for a few minutes. Deglaze with the lentil water, adding a little more boiling water if necessary. Once it comes to a boil, add the drained lentils. Simmer over medium heat until the carrots are tender. Season with salt, pepper, and mint.
