Ingredients for 2 servings:
- 200 g lentils, green or of your choice
- 400 ml water
- 1 tsp, leveled sea salt
- 2 tbsp olive oil
- 2 onions
- 3 garlic cloves
- 1 tbsp tomato paste, hot or spicy
- 1 tsp cumin
- some pepper, black from the mill
- 1 tbsp Balsamic vinegar (raspberry balsamic or vinegar)

Simple, quick, and low-fat. For pure lentil fans
Wash the lentils and cook in twice the amount of water until the liquid is almost absorbed. This cooks super quickly in about 10 minutes in a pressure cooker, or about 30 minutes otherwise. Season with salt. Meanwhile, fry the chopped onions and garlic cloves in olive oil in a pan, add the tomato paste, and continue to cook, stirring. Then add the lentil puree to the pan and cook, stirring continuously. Season to taste with pepper, salt, cumin, and raspberry balsamic vinegar. Serve with goat’s cheese. It can also be eaten warm or cold. Serve with tomato salad.
