Ingredients for 1 servings:

  • 280 g flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 egg(s)
  • 2 tsp cinnamon
  • 100 ml orange juice, freshly squeezed, with fruit pulp
  • 2 tbsp honey
  • 140 g powdered sugar
  • 165 g carrot(s), finely grated
  • 165 g carrot(s), coarsely grated
  • 100 ml oil

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 45 minutes

makes 12 pieces

Whisk together the wet ingredients (egg, orange juice, honey, oil) with the cinnamon, carrots, and powdered sugar. Combine the dry ingredients (flour, baking powder, baking soda, salt) in another bowl. Briefly mix the two mixtures together. Pour into muffin tins and bake at 180°C for about 20 minutes. Makes 12 muffins.
