Ingredients for 4 servings:
- 200 g papaya, unripe green
- 1 chili pepper(s), small green
- 1 clove(s) garlic
- 300 g beans, green
- 1 tbsp peanuts, unsalted, roasted
- 1 tsp dried shrimp
- 6 cherry tomatoes, quartered
- 1 tbsp lemon juice
- 1 tbsp sugar (palm sugar), chopped
- 1 tbsp soy sauce
Instructions
Working time approx. 35 minutes; Total time approx. 35 minutes
Peel the papaya and cut into very fine sticks. Trim the beans and cut into 1 cm pieces. Halve the chili, remove the seeds, and finely chop. Roughly crush the papaya, chili, and garlic in small portions, preferably in a mortar or mortar, or alternatively, in a bowl. Once everything is ground, stir in the beans, peanuts, dried shrimp, and tomatoes and mix well. Season with lemon juice, chopped palm sugar, and soy sauce. Tip: If you want to use dried shrimp instead of dried prawns, soak them in warm water for 5 minutes and then chop them. Prepare the salad shortly before eating, otherwise the papaya will lose its firm texture. Tip from chefkoch.de: Boil the beans several times in boiling water. Raw green beans can cause nausea and vomiting in sensitive people because they contain the protein phasin, which is destroyed by the heat.
