Ingredients for 4 servings:
- 600 g tagliatelle, green
- 200 g leaf spinach, fresh or frozen
- 4 garlic cloves
- 1 small onion(s)
- 4 tbsp oil (grape seed oil)
- 125 g almond sticks
- 450 g cream
- Salt and pepper, from the mill
- nutmeg
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
with grape seed oil, almonds and lots of cream!!
Cook the pasta in plenty of salted water until al dente, then drain well. Trim the spinach, wash it thoroughly, and cut it into thin strips. Defrost the frozen spinach. Peel and finely chop the garlic and onion. Heat the oil in a deep pan or wok and briefly fry the garlic, onion, and almonds. Then remove from the pan and set aside. Add the cream to the same pan and reduce by about half. Add the spinach and toss for about 2 minutes, until it collapses. Carefully mix the pasta, onion mixture, and almonds into the spinach and season with salt, pepper, and nutmeg. It tastes delicious as is, but it also goes well as a side dish with fish!
