Green rice with lots of vegetables

Ingredients for 4 servings:

  • 1 cup of rice
  • 2 cups vegetable broth
  • 2 stalk(s) Celery
  • 1 stalk(s) leek
  • 200 g peas, frozen
  • 100 ml cream
  • salt and pepper

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

As a daycare provider, I have to think anew every day about what my kids might like to eat and what’s healthy to eat with it. This recipe is perfect for getting them used to new vegetables. Bring the broth and rice to a boil and simmer for 5 minutes. Meanwhile, clean the leek, halve it, and slice it into very thin rings. Also clean the celery stalks and cut them into very thin slices. Add both to the simmering rice and simmer for another 5 minutes. Then add the frozen peas, bring to a boil, and simmer for another 10 minutes. Finally, stir in the liquid cream and season with salt and pepper. For me, leeks and celery were the “new” vegetables. Because they simmer for a relatively long time, the children don’t notice them anymore and eat them without hesitation. The older and more “accustomed” the children are, the shorter I let the vegetables cook. Carrot pieces in the rice or a little browned ground meat also taste good. The quantity is enough for 4 small children with a healthy appetite and one adult.
