Green salad with fried ham rolls, walnuts and pine nuts

Ingredients for 2 servings:

  • ½ head of lettuce of your choice, e.g. lettuce, romaine, Batavia
  • 120 g cooked ham, spicy, e.g. juniper ham
  • 8 walnuts
  • 1 handful of pine nuts
  • 1 tbsp apple cider vinegar
  • 1 tbsp sunflower oil
  • 1 tbsp water
  • 1 tsp mustard
  • 1 tsp honey
  • Salt
  • Salad herbs
  • Chives, optional

Working time approx. 20 minutes; Cooking/baking time approx. 12 minutes; Total time approx. 32 minutes

healthy snacking

Prepare the green salad, trimming, washing, and setting aside. Crack the walnuts and quarter them if possible. Roll up the ham slices individually and halve if they are too large. Mix all the dressing ingredients well in a jug. Toast the walnuts and pine nuts in a non-stick pan without fat. After a while, add the ham rolls and fry them all over. Divide the green salad among deep plates, add the ham rolls, walnuts, and pine nuts, and drizzle the salad evenly with the dressing. Sprinkle some chives over the salad if desired and serve. Serve with crusty bread or baguette.
