Spicy bulgur with green asparagus and snow peas

Ingredients for 2 servings:

  • 140 g bulgur
  • 8 stalk(s) asparagus, green
  • 80 g snow pea(s)
  • 125 ml vegetable stock
  • 30 g butter
  • 1 ½ tbsp mild ajvar
  • 1 tbsp soy sauce
  • 2 tsp powdered sugar
  • salt and pepper
  • nutmeg

Working time approx. 25 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 40 minutes

Trim the woody ends of the asparagus and cut the stalks into bite-sized pieces. If necessary, remove the strings from the snow peas and also cut them into bite-sized pieces. Cook the bulgur in salted water according to the package instructions. Melt about 20g of butter in a pan and fry the asparagus and snow peas in it. Season with powdered sugar, soy sauce, nutmeg and pepper and gradually add the vegetable stock and simmer. Finally, add a little salt to the vegetables. When the bulgur is cooked, drain it in a sieve and return it to the pot. Add 1 knob of butter (10g) and ajvar, mix well and season to taste. Arrange the spicy bulgur with the vegetables and serve.
