Green sauce

Ingredients for 4 servings:

  • 500 g yogurt
  • 250 g sour cream
  • 1 pinch of salt
  • 1 pinch(s) of pepper
  • 2 tbsp lemon juice
  • 500 g herbs for green sauce, fresh or frozen
  • 6 eggs, boiled

Instructions

Working time approx. 10 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 10 minutes

Whisk together the yogurt, sour cream, salt, pepper, and lemon juice. Wash the fresh herbs and chop very finely with a mincing knife or large kitchen knife. Stir in the herbs, along with any green liquid that may have formed, or the frozen herbs. Peel and quarter the eggs (you can also dice two of them if you like), and stir them into the sauce. Let stand for about 1 hour. This tastes best with boiled potatoes.
