Green Shell Mussels in cider cream

Ingredients for 2 servings:

  • 2 kg mussels, green-shelled from New Zealand (alternatively mussels)
  • 2 liters of cider
  • 6 carrots
  • 2 apples (e.g. Elstar)
  • 2 onions
  • salt and pepper
  • 250 ml cream
  • 2 tbsp oil

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Peel and dice the onions, carrots, and apples. Wash the mussels, discarding any that have opened. Heat the oil and sauté the vegetables. Then add the mussels and sauté for 5 minutes. Deglaze with the cider, then add the cream. Season with salt and pepper. If any mussels haven’t opened, sort them out and discard them, as they are no longer fresh. Tastes best with garlic baguette.
