Green spelt casserole with leek

Ingredients for 2 servings:

  • 200 g green spelt
  • 200 g quark
  • 50 g oat flakes
  • 350 g leek
  • 100 g cheese, spicy
  • 2 tbsp oil
  • oregano
  • 2 tsp vegetable broth
  • tarragon
  • Caraway seeds
  • salt and pepper

Instructions

Working time approx. 20 minutes; Rest time approx. 20 minutes; Cooking/baking time approx. 1 hour 15 minutes; Total time approx. 1 hour 55 minutes

Wash the green spelt under running water and drain. Cook in a saucepan with 400ml water and 2 tsp vegetable stock for 45 minutes. Allow to swell. Wash the leek, cut it into thin slices, and sauté it in the pan with the oil and a little water until half cooked. Season gently with salt, pepper, and caraway seeds. Mix the quark with the oats and half of the grated cheese, then stir into the green spelt. Season the mixture with oregano and tarragon to taste. Pour the green spelt mixture into a greased baking dish and spread evenly. Layer the sautéed leek on top and sprinkle with the remaining cheese. Bake the casserole in a preheated oven at 175°C for about 30 minutes.
