Green spelt dumplings with cheese filling

Ingredients for 4 servings:

  • 200 g green kernel meal (green kernel flour)
  • 100 g wheat flour
  • 700 ml vegetable stock
  • 50 g butter
  • 3 eggs
  • 1 onion(s)
  • 1 garlic clove(s)
  • 30 g butter
  • 30 g sunflower seeds
  • 1 bunch of parsley
  • 100g Gouda

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 1 hour

Combine the spelt flour with the wheat flour. Bring the vegetable stock and butter to a boil. Add the flour and stir until the mixture starts to separate from the bottom of the pan. Stir in the eggs. Dice the onion and garlic and sauté in the butter. Stir into the mixture. Add the sunflower seeds and stir in the chopped parsley. Form the mixture into 8 dumplings and press a piece of cheese into the center. Let the dumplings simmer in boiling salted water for about 20 minutes. Serve with tomato sauce.
