Ingredients for 4 servings:
- 300 g green spelt meal
- e.g. olive oil
- 650 ml water
- 1 tsp vegetable stock powder, instant
- 1 onion(s)
- 2 eggs, or as needed
- 1 tbsp mustard, medium hot
- e.g. breadcrumbs
- salt and pepper

I don’t know anyone who doesn’t like them, enough for about 20 pieces
Sauté the bran and onions in 1 tablespoon of olive oil until fragrant. Then add the water and stock and bring to a boil. Remove from the heat and let it swell until the mixture is no longer hot. Next, add the mustard and 2 eggs. Mix with a large spoon and then add a few tablespoons of breadcrumbs, not too much at once; it should become a homogeneous mixture, similar to meatballs, which can then be easily formed into patties. If the mixture is too sticky, add more breadcrumbs. If it’s too dry, mix in another egg. Season with salt and pepper. Then form about 20 not-too-large patties (otherwise they’ll fall apart) and fry them brown on both sides in a pan with hot olive oil. I often make them into potato gratin, or we eat them in small flatbreads with tomato, cucumber, lettuce, and yogurt-garlic sauce, and the kids add ketchup. They’re also delicious cold and will keep for 2-3 days in the fridge if you have any leftovers, which almost never happens. They’re also often made at the children’s store, and everyone loves them!
