Green spelt vegetable soup

Ingredients for 4 servings:

  • 120 g green spelt, whole
  • 2 liters of water
  • 1 cube of vegetable stock, instant
  • 2 spring onions
  • 1 bulb(s) of fennel
  • 4 carrots
  • 1 zucchini
  • some salt and pepper
  • possibly crème fraîche
  • Chives, as garnish

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

very simple, very tasty

Bring water to a boil with the green spelt and stock cubes, cover, and simmer for about 50 minutes. Meanwhile, clean and chop the vegetables and add to the soup. Simmer for another 10 minutes, season with salt and pepper to taste, blend with a hand blender, and let stand, covered, for about 30 minutes. Garnish with a teaspoon of crème fraîche and fresh herbs, if desired.
