Green tea parfait

Ingredients for 4 servings:

  • 50 g tea, green, 2nd or 3rd infusion, very concentrated
  • 3 egg yolks
  • 40 g sugar
  • 150 g cream
  • 1 pinch of salt
  • some vanilla powder
  • ½ tsp liquor (corn or vodka)
  • 3 drops of food coloring, green, as desired

Instructions

Working time approx. 30 minutes; Rest time approx. 5 hours; Total time approx. 5 hours 30 minutes

Briefly infuse approximately 1.5 tbsp of green tea 1-2 times with 80°C hot water and discard. The first infusion is always bitter. Then infuse the tea leaves with just 50 ml of water, also no hotter than 80°C, and let it steep for a very long time. The tea should be very concentrated! Beat the egg yolks with the tea, sugar, a pinch of salt, and vanilla in a hot water bath with a hand mixer for 10-15 minutes until thick and creamy. Mix grain alcohol or vodka with a few drops of food coloring, add, and beat for 1 minute longer. Beat the egg mixture in ice water until cold. Whip the cream until stiff and fold in. Line a suitable dish with cling film. Pour in the parfait mixture and smooth it down. Cover with film and freeze for at least 5 hours, preferably overnight. Remove the film just before serving. Cut the parfait into 3 cm cubes. Place 2 cubes on each bamboo skewer and serve.
