Ingredients
 

  • 1 bunch Fresh smooth parsley
  • 2 sprigs Parsley crispy fresh
  • 2 sprigs Untreated lemon zest
  • 0,25 Solo garlic
  • 2 pinches Salt
  • 2 pinches Red chilli flakes
  • 100 ml Extra virgin olive oil

Instructions
 

  • 1 .... what is it and how do you prepare it? I was asked that today by a friend (outside the cook bar). Gremolata is a seasoning sauce from Italian cuisine - and here is my recipe for it:
  • Pluck the leaves of both types of parsley from the stalks and chop them very finely with the freshly torn lemon zest. Dice the garlic as finely as possible and mix everything with a little salt and olive oil.
  • Let steep in the refrigerator before use. The gremolata is served with pan-fried fish dishes, but is also indispensable for a classic osso buco.
  • I also like to sprinkle a hard-boiled egg with it, including roast lamb or rabbit - and if something is left over, you have a savory base for a delicious salad dressing.
  • So: go to the Gremolata !!
