Grilled Leberkäse and apple skewers with pepper crème fraîche

Ingredients for 6 servings:

  • 500 g Leberkäse, coarse, in thick slices
  • 200 g crème fraîche
  • 1 pinch of salt
  • 1 pinch(s) pepper, freshly ground
  • 1 tsp lemon juice, for the cream
  • 1 tbsp lemon juice, for the apples
  • 1 pinch(s) of sugar
  • 2 apples, red
  • 6 sprig(s) marjoram, alternatively dried marjoram
  • 1 piece(s) horseradish, fresh (optional)

Dinner or as finger food

Mix the crème fraîche with salt, pepper, a teaspoon of lemon juice, and a pinch of sugar. Dice the Leberkäse (meatloaf), wash the apples, and cut them into thick, unpeeled slices, core them, then dice them and immediately drizzle with lemon juice to prevent them from browning. Now alternate the Leberkäse and apple cubes on skewers. Brush a grill pan with a little oil and fry the skewers for 2-3 minutes on all sides. Wash the marjoram and shake dry. Pick off the leaves and sprinkle them over the skewers. Season the skewers lightly with pepper and salt. If you like, you can also grate some fresh horseradish over them. Ladle the crème fraîche into bowls, grind them over with more pepper, and serve with the skewers. Tip: The skewers are very easy to prepare; simply cover them with cling film and keep them in the refrigerator until ready to cook.
